Sebbiolo 2 was picked 3 weeks later then Sebbiolo 1 on the 3 of April 2022, again with the generosity of family and friends and grown from the Sharefarmers Vineyard in the Coonawarra by Buster and Sally Macleod. It has a slightly higher alcohol content at %13.2 and a touch of Flaxman valley syrah to add some depth and darkness.
Like with everything I like to do this wine was born out of wondering thoughts and experimentation. 40% of the fruit was sealed in a stainless steal tank for a 3 week carbonic maceration and the remaining fruit was de-stemmed into a picking bin and plunged 2 times a day until ferment was finished and then sealed into a tank for an extended maceration of 50 days. The thought was to see the difference between the 2 wine making techniques on the same fruit; in the end the tannin structure of the extended maceration showed finer grained tannins and the carbonic fruit had a more lifted strawberry bubblegum nose and a deep funk which is played up by the 3% Syrah addition.
Candied cherries, tinned tomatoes, parmesan cheese, cloves. High levels of tannin and acid, its Nebbiolo.
I didn't explode the barrel this time :) we like learning.
$25 a bottle, 312 bottles produced.
