Sebbiolo 1 was the first I have ever made! Coming straight out I was certain that I was going to nail it first time round, I learnt pretty quickly that wasn't going to happen. Wine making lesson #1, yeast metabolise sugar and oxygen into alcohol and carbon dioxide, which, in a sealed container creates pressure! Hence the label, something good had to come of my mistake.
Still, its my first born and I love it; classic tar and rose scented Nebbiolo with a hint of sweet basil, light red brick colour, palate has plenty of tannin structure and tastes of pomegranates and strawberry. 10 days on skins, %100 whole bunch natural ferment, a wine made to served slightly chilled on a hot Australian day.
Picked on the 14th of March 2022 by family and friends in the Sharefarmers Vineyard of the northern Coonawarra. Grown with diligence by Buster and Sally Macleod on classic Coonawarra clay over limestone imparting minerality and clear acidity. 266 bottles were produced. $25 a bottle.
The dedication of this wine is for my parents who have stood by me through the trials of early adult life, without which I wouldn't be here.
